1/4 C Butter
1/3 C Flour
4 Cups water
3 TBL chili powder
3/4 tsp garlic powder
1 ½ tsp salt
In a large saucepan, melt butter. Stir in flour until smooth; gradually add water. Bring to a boil, cook and stir for 1 minute until thickened.( it will not be extremely thick) Stir in chili powder, garlic & salt. Bring to a boil, reduce heat and simmer, uncovered for 10 min.
1 lb ground beef
1 lb bulk pork sausage
1/4 cup chopped onion
1/2 tsp salt
1 can refried beans
8 warmed flour tortillas – prefer large burrito sized.
3 cups shredded Monterey Jack Cheese
In a large skillet over medium heat, cook beef, sausage, onion and salt. Cook until meat is no longer pink. Drain. Stir in refried beans, heat through.
Spread 1/4 cup of sauce in greased 13×9″ baking dish. Spread 1 TBL sauce on each warmed tortilla, place 2/3 cup meat mixture down the center of each. Top with 1/4 cup cheese. Roll up burrito style and place seam side down in prepared dish. Pour remaining sauce over the top and sprinkle with remaining cheese. Bake, uncovered at 350 for 20-25 minutes. Top with your choice of toppings:
Lettuce, tomato, salsa, sour cream, olives etc.
