Ingredients
- 1 medium butternut squash
- 1 tablespoon butter, melted
- 2 tablespoons brown sugar
- 1/4 teaspoon cinnamon
Instructions
- Wash outside of squash, cut off the stem end, and cut squash in half lengthwise. Use a spoon to scrape out the seeds and stringy flesh. Use a knife to score the flesh of the squash, crisscross.
- Pour the melted butter evenly over both halves of the squash. Then sprinkle each half of squash with 1 tablespoon of brown sugar and sprinkle cinnamon over top. For a less sweet version, use a total of 1/2 tablespoon brown sugar and lightly season with pepper and kosher salt instead.
Air Fryer
- Place prepared squash in a single layer in air fryer basket, flesh-side up. Air fry at 375˚F/191˚C for 27 minutes, or until tender.
Oven
- Preheat oven to 350˚F/177˚C. Place prepared squash in a baking dish and add 1/4 cup water to the bottom of the pan. Cover and bake 50 minutes. Uncover and bake an additional 10 minutes.
