Easy and Delicious Foil Packet Dinner Recipe!

This hobo dinner recipe is awesome on the grill or in the campfire. Sausage, chicken, and lots of veggies steamed to perfection!

The foil packets make for easy cooking and clean up too. Looking forward to using some veggies from my garden in this dinner again!

First, you will need to spend some time prepping and chopping up all of the ingredients. Nice, bite-sized pieces for easy eating.

I bought a bag of the pre-shredded cabbage (which was on sale and I had a coupon for it!) and used a mandolin slicer for the squash and zucchini to save myself some time. The original recipe calls for russet potatoes, but I like red and I like not having to peel them too. Another time saver!

I used a pre-cooked smoked sausage. You know, one of the ones that is packaged in a U-shape. I think it was just under a pound, but it still worked out great.

Now look at how pretty all of those veggies are! Love all of the colors in there. It was nearly overflowing, but I did manage to fit it all in my 4-qt bowl.

Then just use your [clean] hands to scoop out equal portions of the mixture for each foil piece. Take a gander to make sure that no one will be deprived of any of the good stuff. Everyone in my family loves the sausage! Share the love.

I probably consume more veggies in this meal than I usually do in a week, and I enjoy it. The meat and veggies are moist and tender. Drizzle on the Italian dressing for even more deliciousness. Yum!

  • 1 pound summer sausage or smoked sausage, cut into 1-inch pieces
  • 4 large red potatoes, cut into 1/2-inch cubes
  • 3 cups shredded cabbage
  • 1 large onion, halved and sliced
  • 1 medium green pepper, cut into strips
  • 1 medium red bell pepper, cut into strips
  • 1 small zucchini, sliced
  • 1 small yellow summer squash, sliced
  • 1 pound chicken tenderloins, cut into 1-inch pieces
  • 2 medium tomatoes, chopped or diced
  • 1/2 cup butter, cut into 8 equal pieces
  • 1/4 cup prepared Italian salad dressing


  1. Do all of the chopping, slicing, and prep for the veggies and meats.
  2. Heat the grill to medium heat.
  3. In a large bowl, combine the first eight ingredients.
  4. Then gently stir in the chicken and tomatoes.
  5. Divide mixture among eight double thicknesses of heavy-duty foil (about 12 in. square).
  6. Top each with one of the pieces of butter.
  7. Fold foil around mixture and seal tightly.
  8. Grill, covered, over medium heat for about 20 minutes, or until chicken is no longer pink and vegetables are tender.
  9. Carefully open foil to allow steam to escape; drizzle with dressing and serve.
