Stir Fry Chicken with Garlic Sauce

Yield: 1 lb | Serves: 4 servings

Ingredients

  • 4 Minced garlic cloves, minced
  • 2/3 cup low-sodium soy sauce
  • 1/2 cup water
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 2 Tbsp cornstarch
  • 1/2 teaspoon pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 lb boneless skinless chicken breast, cut into strips
  • 1/4 cup green onion, chopped
  • 2 cups Frozen or Fresh Stir Fry Vegetables (your choice)

Instructions

  1. Combine garlic, soy sauce, water, honey, 1 tablespoon oil, cornstarch and black/red pepper.
  2. Stir chicken into marinade and mix to coat.
  3. Cover and refrigerate at least 2 hours, stirring once to twice.
  4. In large skillet, heat remaining oil.
  5. Using slotted spoon, transfer chicken to skillet.
  6. Stir-fry about 5 minutes.
  7. Add reserved marinade and vegetables; continue to cook and stir about 3 minutes until thickened.
  8. Remove.
  9. Garnish with green onion.
  10. Serve over rice, if desired.
