Spicy Pasta Bake

Reader Wendy tells us how she uses ingredients from her stockpile.

1 – 28 ounce can of diced tomatoes (I use dei fratelli Seasoned tomatoes) but any brand will do.
1/2 box of Rotilli pasta
8 ounce bag of mozzarella cheese
2 tbs of freshly grated Parmesan cheese (I use Parmesiana Reggiona)
2 tbs of Italian Seasoning, Basil and Oregano

In a small skillet put tomatoes and Spices. Cook for about 10 minutes until it reduces a bit. Prepare Pasta according to package instructions. Place the pasta in a 8 1/2 by 11 baking dish cover with tomato mixture and stir. Sprinkle cheese on top of the pasta and tomato mixture. sprinkle the parmesan on top. Bake 45 minutes @ 350 degrees.

Serve with a tossed salad for a wonderful mean

Cooks Note: If you do not use Seasoned, Rotel Tomatoes or tomatoes with some jalopeno pepper in it. Add a pinch of red pepper to the tomato mixture before you saute it.
