Spiced Sugar Cookie Bars
One of my families Christmas traditions is a dessert bar on Christmas Eve instead of a huge meal! Everyone brings a couple of desserts, my mom does some quick and easy appetizers (Cheese Ball, Fruit and Veggie Tray, etc), and we just have fun without the stress of 2 large meals!
And I absolutely love Sugar Cookies, but sometimes it just takes more time than I have to roll out the dough, cut out all of the shapes with cutters, and then ice them. Making them into bars is quick, easy, and delicious!
- 2 1/3 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon (spice coupons)
- ¼ teaspoon nutmeg
- ¼ teaspoon allspice
- ¼ teaspoon salt
- 1 ¼ cups sugar
- 1 cup (2 sticks) butter (butter coupons)
- 1 egg (egg coupons)
- 2 teaspoons vanilla extract
- ½ cup (1 stick) butter, soften (butter coupons)
- 4 cups powdered sugar
- ¼ cup milk
- 1 teaspoon vanilla
- Food coloring (optional)
Cookies: In a large bowl, combine flour, baking soda, cinnamon, nutmeg, allspice, and salt. Beat sugar and butter in large bowl with an electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Gradually beat in flour mixture on low speed until mixed well. Transfer the dough to a greased baking pan and spread out with hands (put butter on your hands to help with stickiness). Bake cookies in a preheated 375°F oven for 17-20 minutes or until the edges are lightly golden.
Frosting: In a medium bowl, mix together butter, powdered sugar, and vanilla until light and fluffy. Add food coloring of your choice. Frost cooled cookies evenly. Cut into squares and serve.
