This Smoky Grilled Sweet Potato Salad Recipe is a delicious twist on the classic Potato Salad Recipe. Take it on your next picnic! Sour cream gives this grilled sweet potato salad its creamy texture and bit of tanginess. It gets a flavor boost from brown sugar and smoked paprika. This was a very different recipe for me to make so I was a bit skeptical at first but it ended up being pretty easy to make and I really loved the mix of flavor and the hint of BBQ!
Smoked paprika is made from peppers that are dried slowly over an oak burning fire for several weeks. The result is a sweet, cool, smoky flavor. Look for it in the spice section of your supermarket. This side dish is also pretty healthy because the sweet potato has been called a “superfood”, since it is a good source of both fiber and potassium, and high in both vitamins A and C.
This is a declicious recipe for side dish, use it at a picnic, or potluck. Make if for Dad on Father’s Day it goes great with BBQs. You can also make a lower calorie/fat version of this recipe by using reduced sour cream as well.

Smoky Grilled Sweet Potato Salad Recipe
Ingredients
- 1 pound sweet potatoes about 2, peeled, quartered
- ¼ cup water
- 1 green pepper cut into quarters
- ½ red onion cut lengthwise into quarters (leaving ends intact)
- Oil
- ½ cup BREAKSTONE'S or KNUDSEN Sour Cream
- 2 tsp. brown sugar
- 1 tsp. smoked paprika
- Juice from 1 lime
Instructions
- Heat grill to medium heat.
- Place potatoes in microwaveable bowl. Add water; cover with waxed paper. Microwave on HIGH 5 min.; drain.
- Brush both sides of potato, pepper and onion pieces with oil. Grill 12 to 15 min. or until vegetables are tender, turning occasionally. Meanwhile, mix remaining ingredients until blended.
- Remove the vegetables from grill; cool.
- Chop vegetables coarsely; place in large bowl. Add sour cream mixture; mix lightly.
