Simple Zucchini Bread

As a backyard gardener I’m always trying find new recipes to incorporate zucchini into our summertime meals. Each summer I make a few dozen loaves of zucchini bread and tuck them into the freezer so we can enjoy them throughout the year.  The basic recipe stays the same… but if I have extra blueberries or mini chocolate chips on hand sometimes I’ll toss a handful of those in too. 🙂

Zucchini Bread Recipe

Ingredients

3 Eggs
2 Cups sugar
1 Cup vegetable oil
2 Cups shredded zucchini
3 Tsp. vanilla
3 Cups flour
1 Tsp. salt
1 Tsp. baking soda
1/4 Tsp. baking powder
3 Tsp. cinnamon

Directions

Mix the wet ingredients with the dry ingredients and bake @ 350 degrees in 2 regular sized loaf pans (or 3 smaller ones) for about 45- 55 minutes if using the regular sized pans or 35-40 minutes  if using the smaller pans
