Simple Blackberry Crisp Recipe + A Giveaway!
It’s no secret I freeze a lot of produce in the summer time, especially fruit. I do this mostly because I’m a tad bit on the frugal side. 😉 And also preserving summers bounty as it ripens makes preparing side dishes and desserts easy peasy all winter long because my freezer is filled to the gills with berries, peaches, beans, swiss chard and what ever else I’ve managed to grow, forage or buy inexpensively over the summer months.
As I drove home yesterday I noticed my favorite blackberry patch was practically overflowing with ripe, juicy berries. So I grabbed a few containers and headed off to pick my fair share of berrylicious goodness.
Blackberry Crisp: In your favorite pie plate (or casserole dish) add enough blackberries to fill your baking dish. About 4 cups. Then gently toss the berries with 3/4 cup sugar, 1/4 cup flour and 4 thin pats of butter.
Then in a microwaveable bowl melt 1/4 cup butter. To the melted butter add 3 Oat Revolution Instant Oatmeal packets (that you scored for free of course) and still until the oatmeal mixture and butter is combined.
Spread the oatmeal mixture over your berry mixture and bake @ 350 degrees for approx 45 minutes.
Cool and serve with vanilla ice cream. 🙂

Are your arms all scratched up today? When I lived in Portland , we would go behind the old White Stag clorhing plant to find loads and loads of blackberries, but oh, the prickles hurt a lot.
Well I first believed it when I read the book, but since the movie was so close to the book, I’d have to say Anne of Green Gables. I even traveled to Prince Edward Island when I graduated college and I still felt that connection.

I feel I most relate to Sarah Jessica Parker’s character in her new movie I Don’t Know How She Does It. I’m a working mom who’s dealt with everything from head lice during a meeting with clients to bringing my new babies to work with me. Eventhough the movie hasn’t come out yet I know her character all too well!

I know what character I am not like, Karen Von Blixen the Baroness in the movie Out of Africa. She was so brave moving to Africa and fending off lions and living on her own out there. I love her ability to tell the most amazing stories, with sadness and gratitude in her voice. I am still a little afraid of the dark at 32. haha!
