reeses-cookiesOh my goodness these cookies are so amazing. Earlier this spring my sister in law came to visit for Easter and she broke her leg while visiting. After surgery she could not walk and she could not make the long drive home for at least 6 weeks. So my mother in law and I took care of my sil her 4 month old and her 4 year old. Needless to say I had my hands full. A really sweet lady from my church (Shauna)  brought these cookies over for us to enjoy during that time and they were so delicious I just had to have her recipe so I could share it with all of you. I love a peanut butter and chocolate combination so these Reese’s Chewy Chocolate Cookies were tantalizing to my taste buds.

Ingredients Needed:

2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups butter, softened (2 1/2 sticks)
2 cups sugar
2 eggs
2 teaspoons vanilla
1 2/3 cups Reese’s Peanut Butter Chips

Instructions:

1. Heat oven to 350 degrees.
2. In a medium bowl mix together flour, cocoa, baking soda, and salt. Set aside. In a large bowl cream butter and sugar. Add eggs and vanilla and beat well with butter mixture. Gradually add flour mixture until mixed well. Stir in peanut butter chips.
3. Drop by rounded spoonfuls onto ungreased cookie sheet or silicone baking mat. I like to use an ice cream scoop to scoop my cookies. Bake for 8-9 minutes.

Note: Cookies will get fluffy while baking and then flatten out as they cool.

Here is a pan cookie bar variation:

Spread batter in greased jelly roll pan. Bake 350 for 20 minutes.

Kitchen tools I like to use to make cookies:

Artisan Metal Works Silicone Non-Stick Baking Mat Sets
I love these baking mats for more than just cookies. They are great for making candy, pastries, and also for storing fruit leather. The possibilities are endless. I wrote a review about my favorite frugal silicone baking mats that stand up to the name brand silpat. You can get two mats for the price of one silpat. They are always under $20!
ice cream scoops
These ice cream scoops make great cookies scoops or melon ballers. This three pack is only $6.97!
Nordic commercial cookie pan
I love my jelly roll pans. I do not know what I would do with out them. I got a set of three for my wedding and I am so glad I have three because they all get used.
