Quick & Easy No Knead Yeast Rolls

Last Sunday was rainy and cold.  Just the right kind of day for my favorite Quick Comforting Chicken Noodle Soup.  As usual, I didn’t plan ahead, and I really wanted some rolls to go with the soup.  I’m not a patient one either, so I didn’t want to wait for rolls that had to rise twice.  After a quick little google for “Quick and Easy Rolls” I found this gem of a recipe from Confessions of a Pagan Soccer Mom.  I made it, and we loved it!  They weren’t pretty, but they sure tasted good and really were easy!!

Quick & Easy No Knead Yeast Rolls

2 1/2 tsps (2 envelopes) yeast
2 cups warm (not hot) water
1/2 cup sugar
1/4 cup canola oil
1 egg
2 tsp salt
6 cups bread flour (or all-purpose)

Preheat oven to low heat (180-200 degrees). Mix yeast in 2 cups warm (not hot) water and stir until completely dissolved. Add sugar, oil, egg and salt; stir well. Add flour. Stir well. Dough will be stiff and sticky. Brush the top of the dough with canola oil and set on the back of the warm stove. Let set until doubled in size. (I turned the oven off, covered the dough with a damp towel and let it rise for about 90 minutes).

Punch dough down one time and reform into a ball. Grease a 9″x13″ pan. Turn oven up to 350 degrees. Grease your hands and form dough into 20-24 balls. Bake for 20-30 minutes.  (We got about 28 balls out of ours).
