Potato Salad

One of my favorite ways to use up hard boiled eggs!


8 medium potatoes, cooked and cubed
6 hard-boiled eggs, peeled and chopped
1/2 c chopped onion
4-5 pickles, chopped
¾ cups mayonnaise, add more if needed
1-2 tablespoon prepared mustard
1 teaspoon vinegar
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste

Cook potatoes until they are tender, then cube them. In a large mixing bowl, mix all ingredients. Refrigerate until ready to serve. Sprinkle with of paprika and garnish with slices of hard boiled egg.

  • I make my potato salad very similar to this except I add black olives as well. It gives it a little more kick. I also use dill pickles and not sweet.
