Pineapple Pepper Chicken Freezer Meal

Do you have all of these ingredients in your pantry to make this delicious make-ahead crockpot meal? Pineapple Pepper Chicken is one of our family’s favorites, so I always like to make enough to freeze any time I make it for dinner.

We have had this recipe in our in our Freezer Meals series for a few years. Since I do not always have time for group freezer meal cooking I thought I would show you how I like to make dinner for now, and dinner for later, with barely any effort.

Ingredients for Pineapple Chicken Crockpot Meal:

Sugar, vinegar, brown sugar, cornstarch, ketchup, soy sauce, chicken bouillon granules, ground ginger, and chicken are easy to keep on hand for this recipe. The only thing I don’t always have is the 100% pineapple juice, but that’s pretty easy to find at most grocery stores.

How to Prepare the Crockpot Pineapple Chicken:

  1. Combine the first 10 ingredients to make up the sauce
  2. Place chicken and sauce in crock pot
  3. Cook on low for 5-6 hours
  4. For last 30 minutes of cook time, add the pineapple, onion, and peppers to slow cooker
  5. Serve over rice

Double the recipe (or more) to make one for dinner and freeze another for later.

You can cook with a few more chicken breasts if you need to for your family size. The sauce measurements can stay the same.

Crockpot Freezer Meal Tip:

Place your freezer bags in a large bowl so you can fill more than one at a time and keep them from spilling.

How to Prepare This Recipe from Frozen:

Thaw, then dump the chicken and sauce into a slow cooker. Cook for 5-6 hours. Possibly a little  longer if chicken isn’t thawed all the way though. Add the pineapple, peppers, and onion for last 30 minutes of cook time.

Alternately, thaw the ingredients enough to place chicken in a 13 x 9 pan. Place pan in the oven at 350° and bake for 30-40 minutes.

Pineapple Pepper Chicken Crockpot Freezer Meal

Yield: 2.5 lbs | Serves: 6

Ingredients

  • 1 cup unsweetened 100% pineapple juice
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 1/3 cup water
  • 1/4 cup packed brown sugar
  • 2 1/2 tablespoons cornstarch
  • 2 tablespoons ketchup
  • 1 1/2 tablespoons soy sauce
  • 1/2 teaspoon chicken bouillon granules
  • 1/4 teaspoon ground ginger
  • 3 boneless skinless chicken breasts (about 2 1/2 to 3 pounds)
  • 8 ounce can pineapple chunks, drained
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 small onion, chopped (optional)

Instructions

  1. Combine the pineapple juice, sugar, vinegar, brown sugar, cornstarch, ketchup, soy sauce, bouillon, and ginger for the sauce.
  2. Place chicken in slow cooker and add the sauce. Cook on low for 5-6 hours.
  3. For the last 30 minutes of cooking time, add the drained pineapple, onion, and peppers. Serve over rice.
  4. Prepare for Freezer:

  5. Place sauce and chicken together in a resealable gallon freezer bag. Place chopped peppers and onion in a smaller freezer bag. Freeze. Keep canned pineapple on hand for when you are ready to cook the meal.
  6. Prepare from the Freezer:

  7. Thaw in the refrigerator overnight or for 24 hours. Cook as instructed above.

Notes

An alternate cooking option is to bake in a 9x13 pan in the oven at 350° for 30-40 minutes.

    I have a recipe similar to this less ingredients and you use a reynolds baking bag, makes for easy clean up, low cal and serve over rice. Either way easy, tastes great and frees up time.

    I’m in a freezer meal group with only small families. I plan on only using three breasts per bag. Can I cut the liquid ingredients in half?

      Yes! The liquid makes a lot so it will not be a problem at all to cut it in half. Hope you enjoy it. This is one of my favorite freezer meals.

    Just to clarify – is this all cooked when you freeze it? When you bake it after freezing for the 30-40 minutes, the chicken doesn’t dry out?

      So all the ingredients including the raw chicken, peppers and pineapple get mixed together, go into the freezer, then thawed and baked in the oven? Sorry, I’m making this for someone else and I want to make sure I’ve got it right.

    I’m not sure. The way you worded on the trackbacks, i have a question.
    The idea is it to put everything uncooked in the freezer bag (as many as you do prepare) they will be taken out of the freezer bag, frozen and then cooked
    in the crockpot, or unthawed and then placed in the crockpot?
    I don’t want to make a mistake.

      Beverly, you can either thaw it out and cook it in the crockpot, or just cook it up right from frozen in the crockpot… either way will work! It will just take a little longer to cook from frozen. 🙂

    I am a little confused. After 5-6 hours, do I fish out the pineapple, onion and peppers then, put them back in thirty minutes before serving? How long should the dish cook on low total?
