Pineapple Pepper Chicken Freezer Meal

Do you have all of these ingredients in your pantry to make this delicious make-ahead crockpot meal? Pineapple Pepper Chicken is one of our family’s favorites and I always like to make enough to freeze any time I make it for dinner.

We have had this recipe in our in our Freezer Meals series for a few years. Since I do not always have time for group freezer meal cooking I thought I would show you how I like to make dinner for now, and dinner for later, with barely any effort.

Imagine that there is ketchup in that photo. I made this without ketchup because I was forgetful, but it actually still turned out fab so if you decide to forget the ketchup as I did you will still have a fab meal!

How to Prepare the Crockpot Pineapple Chicken:

  1. Combine the first 10 ingredients, then add the chicken
  2. Place in crock pot
  3. Cook on low for 5-6 hours
  4. Set aside pineapple, onion, and pepper
  5. 30 minutes before you’re ready to serve, add pineapple, onion, and peppers
  6. Cook an additional 30 minutes
  7. Serve over rice

Note: If you remember to use ketchup your sauce will have a deeper red color.

You will serve half of this meal tonight and save the other half for later in your freezer. I will save the remaining sauce and other three breasts for my freezer.

You can cook with a few more chicken breasts if you need to for your family size. The sauce measurements can all stay the same.

Crockpot Freezer Meal Tip:

Place your freezer bags in a large bowl so you can fill more than one at a time and keep them from spilling.

Pineapple Chicken Serving Tips:

This night I served over brown rice. This crockpot chicken is great on white or brown rice. It is a personal preference. I alternate with my family. They like the taste of white rice better, but brown rice is healthier.

Eat half for dinner tonight and bag the remaining chicken and sauce in a 1-gallon freezer bag.

How to Prepare This Recipe from Frozen:

Thaw the ingredients enough to place chicken in a 13 x 9 pan. Place pan in the oven at 350° and bake for 30-40 minutes.

  • 2 cups unsweetened pineapple juice
  • 1 cup sugar sugar coupons
  • 1 cup vinegar
  • 3/4 cup water
  • 1/2 cup packed brown sugar sugar coupons
  • 1/3 cup cornstarch
  • 1/4 cup ketchup
  • 3 Tbsp soy sauce
  • 1 tsp. chicken bouillon granules
  • 1/2 tsp. ground ginger
  • 6 chicken breasts
  • 1 can (8 oz.) pineapple chunks, drained Pineapple Coupons
  • 1 medium green pepper or half red and half green for more color and flavor
  • 1 medium onion chopped {optional}


  1. Combine the first 10 ingredients, then add chicken.
  2. Place in crock pot.
  3. Cook on low for 5-6 hours.

  5. 30 minutes before you're ready to serve add pineapple onion and peppers, cook an additional 30 minutes.

    I have a recipe similar to this less ingredients and you use a reynolds baking bag, makes for easy clean up, low cal and serve over rice. Either way easy, tastes great and frees up time.

    I’m in a freezer meal group with only small families. I plan on only using three breasts per bag. Can I cut the liquid ingredients in half?

      Yes! The liquid makes a lot so it will not be a problem at all to cut it in half. Hope you enjoy it. This is one of my favorite freezer meals.

    Just to clarify – is this all cooked when you freeze it? When you bake it after freezing for the 30-40 minutes, the chicken doesn’t dry out?

      So all the ingredients including the raw chicken, peppers and pineapple get mixed together, go into the freezer, then thawed and baked in the oven? Sorry, I’m making this for someone else and I want to make sure I’ve got it right.

    I’m not sure. The way you worded on the trackbacks, i have a question.
    The idea is it to put everything uncooked in the freezer bag (as many as you do prepare) they will be taken out of the freezer bag, frozen and then cooked
    in the crockpot, or unthawed and then placed in the crockpot?
    I don’t want to make a mistake.

      Beverly, you can either thaw it out and cook it in the crockpot, or just cook it up right from frozen in the crockpot… either way will work! It will just take a little longer to cook from frozen. 🙂

    I am a little confused. After 5-6 hours, do I fish out the pineapple, onion and peppers then, put them back in thirty minutes before serving? How long should the dish cook on low total?
