Peanut Butter Rice Crispy Treats Recipe

Do you have a lot of Rice Krispies cereal in your stockpile?

I do. If you took part in the Kellogg’s Fuel Rebate we posted about last year, you may too. (If you haven’t submitted for the Kellogg’s rebate yet, you have until 4/30/12, unless they have already run out of supplies.) A few boxes of Rice Krispies escaped me and I discovered them this week to notice that they had expired last month. Oops. So, I need to use them asap! I first turned to a classic, Peanut Butter Rice Crispy Treats. Yum. Many of you probably already have some version of this recipe, but I thought I’d share the one that I made this week from my family cookbook.

Peanut Butter Rice Crispy Squares

Stir syrup and sugars over medium heat until the sugar is dissolved. (If you let it boil, your treats will probably get hard.) Remove from heat. Add peanut butter and stir until dissolved. Add cereal and nuts; stir until the syrup is evenly distributed. Press into a 9×13 pan and let cool. Cut to serve.

I find it is easier to press the mixture into the pan when my hands are clean and a little bit wet with water. Also, you can add peanut butter chips or chocolate chips to these treats if you want to mix things up a bit.

    My mom got this recipe long ago from her friend Nancy. Nancy and mom always used Cheerios and dropped them in little blobs on waxed paper. Last week I got Cheerios for .50 at my Albertsons, so thanks for this recipe reminder, we will make them with Cheerios. The Recipe is what we call the marshmallow Rice Krispies cookies. We sometimes call it a main food group.
