When it comes to school lunches, I have just one wish.
I’d go back and make some big changes and I’d have a lot more flatout fun!
Now there are so many options for packers, Moms, celebrate it!
My grown-up children love to sit around and talk about their school lunch memories. I was a mom who really cared, (probably too much), but I made sure the calories they consumed were healthy and cheap. I made 12 loaves of 100% stone-ground, whole wheat bread each week. I thought it was delicious, but my oldest son still shakes his head when he thinks of those sandwiches. I tried to pack fresh fruit, veggies, and sometimes healthy treats.
One of the best things about being a grandma is that I can have fun and be a little creative. Healthy will always be of importance, but having my little grands like what’s packed matters too. Yes, I’ve learned from my kiddos.
Last Fall, my oldest daughter had major surgery. I bought some, “Flatout Flatbreads,” and found them to be soft, 100% whole wheat and oh so easy to use. My older 2 grandchildren wanted turkey, veggie cream cheese, (make your own inexpensive version; low-fat cream cheese + dry veggie soup mix, thinned with Greek yogurt), provolone cheese, and romaine rolled together. Their little sister, Lizzy, wanted PB&J sandwich with a banana in her lunch each day. One day I rolled it all together in a flatbread and secretly packed it. Grandma got an “A+” in lunch packing that day!

Spread flatbread with peanut butter, and add some jam or honey. Cut a banana to fit the width of your flatbread. Add the banana and roll it up. Slice it in half and wrap each half with Press ‘n Seal, my favorite sealing wrap.
Now for the best part, as often as you can add a little lunchbox love-note. You don’t have to copy a fancy printable, just scroll it out on a sticky note and add the love.

- For each Roll-up
- 1 flatbread or tortilla wrap
- 2 Tablespoons peanut butter, crunchy is best
- 2 Tablespoon jam, jelly or honey
- 1 banana
- Spread each flatbread or tortilla with peanut butter as smoothly and thin as possible. Add jam, jelly or honey and do the same. Cut banana to fill the width of your flatbread. Roll lengthwise as tightly as you can. Cut it in half and wrap it with a sealing wrap. Be sure to add 2 napkins and a little lunchbox love note and pack.
