Thank you to my beautiful grandma who shared this super yummy pasta salad with me! I love how colorful and full of flavor it is! I will be making it again this weekend for our Memorial Day family get together. Pasta salads are always a favorite!

To make this TERRAfit-friendly, use whole grain pasta.

Pasta, Cheese & Veggie Salad Recipe

Prep Time: 2-4 hours | Cook Time: 15 min
Yield: Serves 6 as a main dish & 12 as a side | Serves: 6-12


  • 2 cups tri-color rotini
  • 2 cups brocoli florets, cut to bite size
  • 1 1/2 cups cheese, cubed to bite size (you can use whichever kind you like)
  • 10 cherry tomatoes, quartered
  • 1 medium green or red sweet pepper, chopped
  • 2 green onions, thinly sliced
  • 3 Tbs. snipped fresh basil (or 1/2 tsp. dried)
  • 3 Tbs. red wine vinegar
  • 2 Tbs. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • Olives and fresh mushrooms or cucumbers are also great to add!


  1. Cook pasta according to package instructions, adding the broccoli for the last 5 minutes of cooking.
  2. Drain and rinse under cold water.
  3. In a large serving bowl, combine pasta, broccoli, cheese, tomatoes, peppers and onions.
  4. Dressing: In a seperate smaller bowl or salad dressing shaker, combine basil, vinegar, oil, salt & pepper.
  5. Mix or shake well to combine.
  6. Pour over salad & toss to coat.
  7. Cover and chill for 2-4 hours before serving.
