Microwave Peanut Brittle
My daughter and I made microwave peanut brittle recipe over the weekend using a recipe from allrecipes.com and it was delicious! I never knew you could make peanut brittle in the microwave. If you are planning on baking cookies or making candy this weekend you will definitely want to add this easy peasy recipe to your list.
Ingredients
- 1 cup white sugar
- 1/2 cup light corn syrup
- 1 cup salted peanuts
- 1 teaspoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
Directions
- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

already had everything on hand except for peanuts, and i found 4oz bags of peanuts at rite aid for $1, grabbed a couple, now lets give this a try!

the first time I made this it tasted burnt so adjusted my cooking times and second time was perfect! Also make sure you wear oven mitts. The glass bowl is very hot!

I have been making this in the microwave for many years. I to had to change my times for cooking, so it wouldn’t taste burnt

Microwaves can vary with cooking temperatures. Some cook very hot.
Next time I would try taking it out and stirring every 1 minute and possibly don’t cook for the full time depending on how it looks. Sorry youra burned. It is always a bummer to lose ingredients.
