Meatloaf w/ Mashed Potato Frosting
I hate meatloaf. My husband loves meatloaf. I want to be nice & cook him one of his favorite meals, but all meatloaf makes me gag. Well, until I discovered this meatloaf. He LOVES it. I LOVE it. Everyone wins!
1 lb extra lean ground beef (did you snag some on sale last week @ Fred Meyer?)
1 jar beef gravy, halved
1 cup bread or cracker crumbs (I use Italian bread crumbs)
1/2 cup finely chopped onion
1 egg, lightly beaten
1/2 tsp pepper
1/2 tsp garlic salt
2 1/2 cups hot mashed potatoes (I use baby reds & leave skin on)
1 tsp olive oil
Mix first 7 ingredients in large bowl (using only 1/2 the gravy & reserving the other half). Shape into loaf. Bake in an 11×7 dish @ 350 for 1 hour. Drain fat. Spread potatoes evenly over top & sides of loaf. Drizzle w/ oil and sprinkle w/ paprika. Bake an additional 20 min. Serve with remaining heated gravy. Enjoy!
