Matt’s Mashed Potatoes

We had dinner last night with a few friends, and one of the dishes was these Mashed Potatoes!  They are SO amazing!!

  • Clean, cube, and boil 10-12 potatoes (we left the skins on).
  • Instead of adding milk and butter to the potatoes, add three personal sized containers of plain Greek yogurt (seasoned with black pepper).
  • Blend well.  You may need to add just a splash of milk to get them to the consistency you like..
  • Enjoy!

I know it sounds weird.  I thought he was nuts!  But he’s not nuts, he’s brilliant!!  These are the best mashed potatoes I’ve ever eaten (just don’t tell my mom)!!!

  • I do this with baked potatoes but never thought of doing it with mashed. If you want loaded mashed potatoes, try adding a packet of the potato seasoning you find in the produce section!

  • You can also add some cauliflower! Try 1 lb. of red potatoes cut with skin on and 1 cup of small cauliflower flourets boiled until soft. Mash and add 1/4 c. of greek yogurt or fat free sour cream. Stir in 1 c. of shredded cheddar cheese. It’s soooo good and my kids have no idea there is cauliflower in it. With my family I usually make 1 1/2 recipes, but small or large, it’s yummy!

  • I only make mashed taters with sour cream or Vegan sour cream for one of our sons, but never thought of Greek yogurt! Since Greek yogurt is such a huge craze now this makes sense!
