Mashed Potatoes With Bacon And Chives

Thanksgiving would simply not be Thanksgiving without a heaping bowl of mashed potatoes on the table. It seems we all have our own opinions on how mashed potatoes should taste.  I’ll admit, I’m a total mashed potato snob.  Plain mashed potatoes (made with milk, butter and salt & pepper) simply will not do. I for one, happen to like my mashed potatoes jacked up with bacon, chives, sour cream, cream cheese, lots of butter and a little salt & pepper.

Jacked Up Mashed Potatoes

8-10 large potatoes
1 to 1 1/2 cups sour cream
1/4 cup unsalted butter
4 oz. cream cheese
3 tablespoons fresh chives (reserve 1 tablespoon for garnish)
8 slices of cooked (crisp) bacon (reserve 3 slices for garnish)
Salt & pepper to taste

Simply boil your potatoes until soft. Drain. Toss potatoes into your KitchenAid Mixer bowl, add all ingredients and combine until smooth.  Garnish with reserved bacon and chives.

Dig in!

    This is how we make them at our house only we never add cream cheese, but we do add Parmesan cheese & garlic! I’m going to have to try it w/ the cream cheese, as I can eat cream cheese by the brick. I guess I have an inner desire to be on the Biggest Loser!

    Safewayhas the 5 oz. tub of Kraft fresh Parmesan cheese (over in dairy) for $2.50 There is a $1/1 coupon sticking out on a tearpad in front of the product. Use with a Double = $1 …….$1.50 with No Double. Regular price is $4.99!!

    I’ve seen the coupons in 3 or 4 different Safeway stores.
