and when everyone is screaming for ice cream, it’s  freakin’ fantastic to pull this Ice Cream Butterscotch Dessert out of the freezer!  It’s fast, easy, and nice to have on hand when friends and family unexpectedly stop by.  Weeks ahead, whip up a pan you can share at a potluck or summer dinner party.

Here’s the scoop, combine flour, oats, brown sugar, pecans, and butter in a mixing bowl with a fork or pastry blender.

Press it onto a cookie sheet and Bake at 400 degrees for 10 minutes.  Cool

Separate it into crumbs with a fork,  Sprinkle 1/2 crumbs into a 9×13″ pan.  Drizzle with 8 ounces of butterscotch topping.  Soften ice cream and spread over crumbs.  Sprinkle remaining crumbs over ice cream.  Cover and freeze well.

To serve, drizzle a little butterscotch sauce on each plate, add an ice cream square,  and another drizzle of butterscotch sauce.  If desired, add a shot of whipped cream, top with a cherry, and let the celebration begin!

This recipe can easily be made gluten free by using gluten-free flour.  I recommend King Aurthur Brand.

  • 2 cups flour
  • ½ cup oats
  • ½ cup brown sugar
  • 1 cup pecans chopped
  • 8 ounces butter melted
  • 16 ounces butterscotch ice cream topping
  • ½ gallon vanilla ice cream
  • whipped cream for garnish
  • maraschino cherries for garnish


  • Preheat oven to 400°F/200°C.
  • Combine first 5 ingredients well and press into a cookie sheet.
  • Bake 10 minutes at 400°F/200°C.
  • Cool.
  • Separate into crumbs with a fork.
  • Sprinkle 1/2 crumbs into a 9x13" pan.
  • Drizzle with 8 ounces of butterscotch topping.
  • Soften ice cream and spread over crumbs.
  • Sprinkle remaining crumbs over ice cream.
  • Cover and freeze well.
  • To serve, drizzle a little sauce on a plate.
  • Add an ice cream square.
  • Drizzle with more butterscotch sauce.
  • Garnish with a shot of whipped cream and top with a cherry.
