Homemade Granola Bars

I’m always on the hunt for a yummy snack for the kids. And while the popcicle seems to be the #1 requested snack this summer, there are times when I like to treat them to a little yummy chocolate-y goodness. This is a easy recipe to follow and the end result is a delicious granola bar. It’s a “stays in granola bar shape” kind of bar…no need to worry about it breaking into pieces and the recipe can be easily modified to accomodate different tastes and pantries.  Here’s what you need for this recipe:

Homemade Granola Bars

  • 1/2 c. honey or corn syrup
  • 1/2 c. brown sugar
  • 1/2 c. peanut butter
  • 2 c. quick oats
  • 2 c. puffed rice cereal
  • 1 or 2 T. wheat germ {optional}
  • 1 c. total of your favorite add-ins {I used chocolate chips and almonds because it’s what I had on hand, but you could also mix and match dried fruit, seeds, etc.}
  • 2 squares Almond Bark (optional, as a melted drizzle over the top)


  1. In a small sauce pan, heat and mix the honey (or corn syrup) with the brown sugar over medium-high, stirring constantly.
  2. Remove from the heat and stir in peanut butter. Set aside.
  3. In a separate bowl, stir together oats, puffed rice, & wheat germ.
  4. Pour in honey mixture and stir well.
  5. Add chocolate chips, almonds, and any other fun ingredients you might like.
  6. Spray a 13×9 glass dish and spoon the mixture in.
  7. With a greased hand or a piece of wax paper on top, gently smooth out bars. You can also use rolling pin. Press hard to ensure that the bars are solid.
  8. Place in the fridge to cool.
  9. Melt Almond Bark in the microwave according to the instructions. When thin, drizzle over the top of the bars in a zigzag pattern.
  10. Cut when cooled.
  11. To store, place in an air tight container or wrap individually in wax paper. Keep in the fridge until they area ready to eat.
