Healthy Spinach Omelet

You may have seen that I’ve been very careful about what I eat lately (just trying to shed this extra baby weight!)… last week I made a SUPER yummy (and filling) omelet!  Dang, I forgot to snap  a picture… because it was pretty!!

Healthy Spinach Omelet

Spray pan with some Canola Pam.

Chopped spinach (the spinach in the bag works just fine)
Fresh sliced mushrooms
Diced tomatoes (I love mine sauteed, but you can put yours fresh on top)
Sliced Olives
Sprinkle Mrs Dash on top if desired.

Once veggies have reached desired tenderness, spread them out evenly in the pan and then pour 1 cup of Egg Beaters over the top. You can either scramble them, or cook as an omlette.

Sprinkle 1/4 of shredded low-fat mozerella cheese on top and let melt.

Enjoy and you’ll be FULL!  This was the first time I had ever tried Egg Beaters!  I got one carton for $2.00 at Fred Meyer, and I know we’ve had coupons for them in the past, but don’t see any right now.  If you are an Egg Beater eater, what is a good price for these?

  • One of the recent All You magazines had a $1 off 2 coupon for Egg Beaters. If you buy in bulk at Costco, the are $1.50 per 16 oz carton.

  • Alb’s occasionally has had these with a cat and on sale. I bought about a dozen cartons last year and I think I got them for about 75 cents per carton after the cat and coupons. I was figuring I needed to pay less than I would for the same amount of eggs.

    Nice part is they freeze great! I have been using them this past year in all kinds of dishes and have been pleased with the results. Hubby loves them.
