Grilled Teriyaki Chicken

Try this easy grilled teriyaki chicken for dinner!

This simple teriyaki chicken comes off the grill so moist and delicious! For an awesome meal, serve it with grilled pineapple and cooked rice. This chicken would be awesome in a salad too!

If I am dealing with mondo chicken breasts, as many of them are from Zaycon, I like to pound them down a bit. I want the chicken to be about 1 inch or so thick because if it is any thicker it will not cook as quickly or evenly. In this case, I also cut the larger breasts into two pieces in order to get a little more surface area for the marinade.

I tried a few different homemade teriyaki marinades for grilled chicken and this one was the clear winner. It is pretty simple to make too – pineapple juice, soy sauce, lemon juice, ginger, garlic, sesame oil, onion, and dark brown sugar. Note: I actually used ginger paste, which can be substituted straight up for fresh ginger.

Using oil of the sesame variety (I used toasted sesame oil) and dark brown sugar (opposed to the more common light brown sugar) adds some yummy depth to the flavor of the marinade. Just whisk all the ingredients together and you’re ready to get that chicken marinating!

I let the chicken marinate for about 5 or 6 hours – fix it up right after lunch, then grill it for dinner. I think it is probably fine to let it marinate anywhere from 3 to 8 hours though.

Grilled Teriyaki Chicken - easy, delicious chicken dinner from the grill


  • 3 to 4 pounds boneless, skinless chicken breast
  • 1 cup pineapple juice
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup finely chopped yellow onion
  • 1 tablespoon dark sesame oil
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon dark brown sugar
  • 1 tablespoon fresh lemon juice


  1. In a small bowl, whisk together the pineapple juice, soy sauce, onion, oil, ginger, garlic, and lemon juice.
  2. Pour the marinade over the chicken, seal the bag, and let marinate in the refrigerator for about 6 hours.
  3. Drain the liquid from the bag.
  4. Grill the chicken over medium-high heat for about 6 minutes each side, until the chicken is cooked through.
  5. Remove the chicken from the grill, tent with foil, and let rest for 5 minutes.
  6. Slice the chicken into strips and serve.


Marinade recipe yields about 2 1/4 cups.
