This recipe goes a long way! If you need to take a dessert to a gathering, it’s a low maintenance, eat with your fingers treat and will feed a lot of people!
This is really just a big, yummy sugar cookie!
1 1/2 c. sugar
1/2 c. butter
1 t. vanilla
1/2 c. shortening
2 t. cream of tartar
2 3/4 c. flour
1/4 t. salt
1 t. baking soda
1 1/4 c. sugar
16 oz. cream cheese
5 t. fruit juice (whatever kind you like, but a milder variety is best)
Additional Ingredients: Fruits of your choice.
Mix dough ingredients and then spread evenly onto a jelly roll pan. Bake at 375 for 10-12 min., and let cool completely.
Mix topping ingredients together and once the crust is cooled, spread topping over it. Some advice: use mild fruit juice such as apple or something that matches the fruit you want to put on top, such as pineapple. Stronger juices (we tried V8 Splash once) take over the flavor.
Finally, top with your favorite fruit: strawberries, pineapple, kiwi, blueberries, raspberries…whatever your heart desires! My favorite is fresh strawberries, pineapple, and kiwi.
