Ingredients
Cook the Bean in the crock pot first
- 1 onion cut in half and peeled
- 1 cups dry Pinto beans rinsed
- 1 cups dry Black Beans rinsed
- 1 cup red beans rinsed
- 2 tablespoons minced garlic
- 3 teaspoons salt
- 1 ¾ teaspoons fresh ground black pepper
- ⅛ teaspoon ground cumin
- 5 cups water
- 4 cups chicken broth
To Make the Burritos
- 12 to 18 Burrito size Tortillas
- 2 to 3 cups of shredded cheese
- 1 cup Taco Sauce enchilada sauce works too
- 1 batch of Slow Cooker Refried Beans
Instructions
To Make the Beans:
- Place the onion, rinsed beans, garlic, salt, pepper, and cumin into a slow cooker.
- Stir in the water and chicken broth.
- Cook on High for 8 hours, adding more water as needed.
- Once cooked strain the beans reserving the liquid.
- Mash the beans with a potato masher or hand mixer.
- Add the reserved water as needed to attain desired consistency.
To Make the Burritos:
- Spoon some beans onto the tortilla.
- Add cheese.
- Fold in two sides of the tortilla then roll the rest of the tortilla.
- Roll the folded burrito into a 12"X12" piece of foil and fold the ends around it.
- Freeze.
- To eat: remove foil and microwave the burrito for 2 minutes or until the burrito is heated all the way through.
- It made about 18 burritos.
