All of my grand kids adore sloppy joes.  We’ve got a day at the lake coming up.  I made a big batch of sloppy joe filling and froze it.  I will thaw one bag for each family joining us, and grab some pita pockets.  All I have to pack is some chips, veggies, fresh fruit and a yummy dessert for an effortless family outing my family really enjoys.  If you have an outlet adapter in your car, you can heat the filling in a slow cooker on the way to your destination.  Because it’s all been made way ahead, WE can all have a great time!

 Sloppy Joe Quinoa Pitas

Like all of you, I wait for a good sale on ground beef, yeah just watch for FabuLESS deals here!  I buy a large quantity and then divide it up.  I make and freeze meatballs, enchiladas, and sloppy joes.   Quinoa is a grain, so versatile and good for you.  You’ll be surprised at how well the two, beef and quinoa go together.  I try to keep some in my fridge and add it to oatmeal, salads, scrambled eggs, and Greek yogurt with fruit.

I always brown the beef while I chop onion, peppers, and celery in my food processor.  Have I told you my food processor and digital pressure cooker are my two favorite kitchen tools?  I can’t believe how much time they both save me.  Anyway, then I add tomato sauce along with all the other ingredients.

Let your sauce simmer, cool, measure, and I like to use zip-top bags that I can label and stack flat on a sheet pan.  After it’s frozen, I remove my pan from the freezer, and the bags stack easily.  It’s so easy and feels really great to get ahead.

This recipe is economical, and the vinegar and mustard give it a little tang.  We really enjoy the nutty texture of quinoa, how it kind of pops in your mouth.  Quinoa is gluten-free and it naturally thickens this filling.  If you haven’t tried it, this is a tasty, and maybe even sneaky way to begin, for those of you with picky eaters!

Yield: 6 pitas | Serves: 6


  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup green pepper, chopped
  • 1 cup tomato sauce
  • 1/2 cup ketchup
  • 1 Tablespoon brown sugar
  • 1 Tablespoon vinegar, (I use cider vinegar)
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup water
  • 1/4 cup quinoa
  • 6 pita rounds


  1. Brown ground beef and drain fat.
  2. Combine onion, celery, peppers, tomato sauce, ketchup, brown sugar, vinegar, Worcestershire sauce, dry mustard, salt and pepper.
  3. Bring to a boil, cover and reduce heat.
  4. Simmer about 30 minutes, stirring occasionally.
  5. Add cooked quinoa and stir well.
  6. To serve:
  7. Cut pita bread in half and fill each with 1/4 to 1/3 cup of filling.
  8. To cook quinoa:
  9. Vigorously rinse 1/4 cup of quinoa well in a wire mesh strainer.
  10. Add quinoa, to 1/2 cup water in a small saucepan.
  11. Bring to a boil, cover and cook on low for 15 minutes.
  12. Makes 6 servings.
