Easy Peanut Satay Chicken Kebabs Recipe! Great Freezer Meal!

I love how simple and easy it is to make these peanut satay chicken kebabs! The unique combination of common ingredients gives the chicken a mellow, comforting flavor. Orange, soy, ginger, and peanut butter all meld together in this fantastic grilled chicken recipe.

I have served this grilled chicken to several people and they have all loved it! I will definitely be making it again soon and I am glad that I still have a bag of it in my freezer. 😉

Not many ingredients are needed for this recipe and they are all pretty common and easy to find at your local grocery store. You probably already have many of the ingredients on hand: chicken thighs, chunky peanut butter, orange juice concentrate, soy sauce, fresh ginger, orange zest, hot sauce (don’t worry, they really aren’t spicy), and green onions.

Chicken thigh meat does not dry out easily while cooking, which makes it especially nice for grilling. However, they are not as neat and tidy for slicing like chicken breast meat. It took me quite a while to slice up all of that meat, of course, I did make 6 freezer meal bags, which is 12 pounds of chicken. Whew.

The sauce only takes few minutes to whip together though! Tip: To help keep your freezer meal bags upright, stand them up together in a large bowl. It makes it easier to portion the ingredients among the bags and keep food from spilling out.

The threading onto skewers gets a little messy, but it is worth it. You will probably be able to fit 5-7 strips of chicken on each skewer. Try to keep the skewered meat around the same thickness throughout so it cooks more evenly.

For a nice presentation, serve the skewers over a bed of rice and sprinkle with chopped green onions. Yum!

3 Entrees:

  • 6 pounds boneless skinless, chicken thighs
  • ¾ cup natural chunky peanut butter for the marinade
  • ½ cup orange juice concentrate thawed for the marinade
  • cup soy sauce for the marinade
  • 1 tablespoon minced ginger for the marinade
  • 2 teaspoons orange zest for the marinade
  • ½ teaspoon hot sauce for the marinade
  • 5 green onions chopped (about 3/4 cup)


Preparing for the Freezer:

  • Label 3 one-gallon freezer bags.
  • Rinse chicken and cut into 1/2 - 1-inch strips.
  • Divide chicken evenly among the 3 bags.
  • Combine peanut butter, juice concentrate, soy sauce, ginger, orange zest, and hot sauce in a medium bowl; divide evenly over chicken.
  • Into each bag measure about 1/4 cup of the chopped green onions.
  • Seal bag and shake gently to coat chicken and distribute green onions.
  • Remove air from bag, seal, and freeze flat.

Prepare after Freezing:

  • Thaw completely in refrigerator.
  • Heat grill to medium-low.
  • If using wooden skewers, soak them in water for at least 30 minutes first.
  • Thread chicken pieces onto skewers.
  • Several pieces can be woven onto a skewer and should be just touching each other, but not overly crowded.
  • Grill until chicken pulls apart easily and is no longer pink, about 10-14 minutes.
  • Discard remaining marinade.

Recipe Notes

Alternately, you can cook the skewered chicken on a greased broiler pan. Broil chicken 5 inches from heat for 10-14 minutes, turning frequently, until chicken pulls apart easily and is no longer pink.

  • This is a GREAT RECIPE just needs some vegetables like mushroom caps or I’d EXPERIMENT WITH THICK SLICES OF ORANGES. WORTH A TRY.

    • Let me know if you find a great combo, Rita! If you plan to grill the veggies, keep in mind that they often cook at different rates than meat, so you may want them on separate skewers. We just served the chicken skewers with a fruit salad on the side. 🙂 Yum!

  • Hi, I need to prepare some chicken satay for a party next week. Can I freeze them directly on skewers so then I only have to defrost and grill or not advisable? Thanks!

    • Hi, Joanne. I haven’t tried that before, but I think it would work! I’d let them thaw by putting them in the refrigerator for about 24 hours or so. If you use wooden skewers, soak them in water before you put the chicken on and freeze. Hope it works out!
