Black Bean and Corn Burritos

This recipe is one of my family’s favorites. I love it because it’s an inexpensive, but filling meal to serve up during any time of the year. It’s great for cold winter days when you need a little kick, or easy to make in a rice cooker when you don’t want to cook on a hot summer day. The best part is that you can make half to eat for dinner and then put the other half in the freezer for later. Check out this easy and tasty recipe which will be a new family favorite!

Black Bean and Salsa Burritos Preparation

Another reason why I like about this recipe is because I have been able to make it more healthy based on the needs of my family. We add a small amount of cheese at the end, then top it off with plain greek yogurt (which has been a surprisingly great twist). Preparing For the Freezer: Prepare recipe as directed as above. Allow the meal to cool off and then place in a Ziplock bag or Freezer container.

Prepare after Freezing: Allow to thaw in refrigerator over night, then while heating the ingredients, add salsa as needed. Then finish preparing meal with toppings.

Prep Time: 15 minutes | Cook Time: 45-60 minutes
Yield: 5lbs | Serves: 8-12

Ingredients

  • 4 Cups Cooked Rice
  • 16-32 oz Salsa
  • 1 1/2 cups frozen corn
  • 30 oz (2 cans) of black beans
  • Shredded Cheese
  • Tortillas
  • Sour Cream or Plain Greek Yogurt
  • Cilantro

Instructions

  1. Cook Rice according to directions to equal 4 cups.
  2. Once the rice is ready, add in 16 oz of salsa, frozen corn, black beans, and shredded cheese.
  3. Stir together and allow to heat through.
  4. Add more salsa as needed.
  5. While burritos ingredients are heating up, warm tortillas and rinse cilantro.
  6. Prepare the burritos by topping with sour cream or plain greek yogurt, salsa, and cilantro, then roll up and serve.
