- 2 eggs
- 1 cup chopped veggies (tomatoes, spinach, bell peppers, broccoli, etc.)
- 1 tablespoon mozzarella cheese (optional)
- In a microwave-safe bowl, beat two eggs and add your choice of veggies. Season lightly with salt and pepper (optional). Sprinkle some mozzarella cheese on top too, if desired.
- Microwave for 30 seconds. Give it a quick stir, then microwave for an additional 30 seconds. Continue cooking until eggs are set, 1 to 2 minutes more. Stir and serve warm.
