Farmer’s Pie

So, maybe I’m spoiled, or deprived, (one or the other… right?) but I don’t usually have Thanksgiving leftovers (we go to my parents and in-laws every year)… Well, once we had it at my house, but I sent all the leftovers home with my guests :).  So when given the task of “what to do with those leftovers”, it kind of stumped me!  But then I asked an amazing chef friend of mine, who is blessed to have a husband that cooks even better than she does!  This is one of the many things they do with their leftovers:


Leftover Turkey (about 1 cup)
Leftover Green Bean Casserole (about 2 cups)
Onion Soup Mix (1 package)
Leftover Gravy (about 1/2 cup)
Leftover Mashed Potatoes (about 3-4 cups)

The great thing about this dish, is just throw in what you have… if you have tons of turkey left over, and not a ton of casserole, that’s great too!


Shred the turkey up and add it to your green bean casserole, with a package of dry onion soup mix, leftover gravy, and about 1/2 a cup of water.  Stir together and put in the bottom of a 9×9 pan (or casserole dish if you have lots of leftovers!) and put the mashed potatoes over it.  Bake at 350 for 30 minutes, or until slightly brown on top.

    Turkey Enchilada’s, Turkey Pizza, Creamed Turkey on Toast, Turkey Sandwiches of course, Lasagna Roll ups just to name a few.
