FabuLESS Freezer Cooking: Southwest Chicken Wraps

Southwest Chicken Wraps


3 cups chopped chicken (4 breasts)
1 cup of your favorite Salsa
1 ½ t chili powder
¼ t garlic powder
1 C shredded cheddar
1 14 ½ oz can of black beans
8 flour tortillas

18 cups chopped chicken (24 breasts, 12 lb)
6 cups of your favorite salsa
3 T chili powder
1 ½ t garlic powder
6 C shredded cheddar
6 14 ½ oz cans of black beans
48 flour tortillas

TO PREPARE FOR FREEZING: Slow cook chicken in crock pot for 5-6 hours or until it reaches shredding consistency. Combine with salsa, chili powder and garlic powder and bag for freezing. Bag cheese and tortillas for freezing and place beans in pantry.

Thaw. Heat chicken mixture on stove over med heat until heated through, about 3 min. Remove from heat, add drained and washed beans and cheese. Serve in warm tortillas and top with cheese, lettuce, tomato, onion. Tortillas should be allowed to thaw completely and then can be warmed in microwave or on the stove.
Notes: This is extra good with the raw tortilla’s you can buy at Costco.
It is extra frugal if you make your own tortilla! (It’s easy!)

    So, I was running late tonight, and my freezer meal inventory was 0…I remembered seeing this and whipped these up! WOW! How simple and delicious. Of course I made extra, but just wanted to say thanks for sharing. YUMMY!!!

    When you put the chicken in the crock-pot do you put it in by itself or with water or something else?


    I usually add a little water and some salt/pepper or a mild seasoning. 🙂

    I am looking for wraps to freeze individually for quick lunches. I assume I could make these and freeze them, and they would thaw out in a few hours in a lunch sack. Has anyone ever done this or do you think it would work? I really need some pre-made lunch items like this to freeze, but I am having a hard time finding them. Any help would be appreciated.

      Sounds like it would work since everything is precooked! The only thing I wonder is if it would taste good cold?

      I have used a similar recipe for making cold wraps.. I mixed refried beans (made from chickpeas) with chili powder, cumin, parsley, and cayenne pepper.. I mixed that with sour cream.. diced some onion and avocados .. they were amazing cold!!! I did not try freezing them 🙂

    How big of a family would you say this would feed. I have a family of seven.

    You could also just put your raw chicken breasts, salsa and seasonings in a freezer bag. On the day you wanted to serve this meal, you would just transfer the seasoned chicken from the bag to the Crock-Pot (no need to thaw) and cook 5 to 6 hours. That way the chicken would only be cooked once (as opposed to being cooked, frozen and reheated) so it would taste much fresher.
