Freezer Meal Recipe: Navajo Tacos
Easy weeknight dinner and freezer meal recipe!
This recipe is very simple, but still so delicious! Definitely one of my favorite ways to do tacos. The fresh, flavorful toppings go perfectly with the fried bread.
Using a pre-made roll dough makes the fry bread super easy. Hooray for Rhodes rolls! The Texas rolls variety of frozen Rhodes rolls dough are a great size for this recipe. I don’t fry things very often, so I felt intimidated at first. But this is really very easy. It only takes a small amount of oil in a large skillet, heat on medium-high, and you’re ready to start frying the roll dough! Grab some tongs and gently place the thawed, rolled out dough in the hot oil.
P.S. You might want to set aside some extra dough for a scone treat later too. While I fry the dough for the tacos, I can’t help but think about how delicious scones are with honey butter! 😉
Even though the dough is fried, the tacos still have a light, fresh feel and taste because of the fresh toppings! Any of your favorite taco toppings will be delicious on the fry bread – salsa, guacamole, chopped avocado, corn, diced tomatoes, olives, etc.
I think that 1 1/2 tacos is just about the right amount for a hungry adult. So, depending on the appetite of those you are serving, you may want to plan on 1 to 2 per adult.

Freezer Meal Recipe: Navajo Tacos

Ingredients
- 12 frozen Rhodes Texas rolls
- 1 pound ground beef
- 1/2 medium onion, diced
- 1 (15 oz) can pinto beans
- 1 packet taco seasoning or homemade recipe (1 to 2 tablespoons)
- 2 cups shredded cheddar cheese
- Vegetable oil for frying
- 2 cups shredded lettuce
- 2 medium tomatoes, diced
- sour cream
- salsa
Instructions
Preparing for the Freezer:
- Brown the ground beef with the onion. Add the taco seasoning per instructions on packet or taco seasoning recipe. Let cool and place in a freezer bag. Portion cheese into a bag. Place both bags into a bag with the frozen rolls.
Prepare after Freezing:
- Thaw rolls. Heat ground beef and add rinsed pinto beans, until warmed through. In a large skillet or saucepan, heat frying oil on medium high heat or to about 375 degrees F. Flatten thawed roll dough into 6-inch circles; fry each side until golden brown, about 1-2 minutes per side.
- Serve fried bread with toppings of ground beef, cheese, lettuce, tomatoes, sour cream, salsa, avocado, olives etc.
Notes
Feel free to skip the freezing part! Just thaw and fry the roll dough, brown the ground beef with onion, add beans to the beef, and prepare the toppings.

what are Rhodes Texas rolls ?
They are frozen roll dough balls that can be found in the frozen section at most grocery stores. The “Texas” ones are a bit bigger than the other ones. Hope that helps, Elaine!
