FabuLESS Freezer Cooking: Ham and Cheese Crepes

1/2 cup flour
pinch of salt
3 eggs
3/4 milk
2 tbsp melted butter
2 cups shredded swiss cheese
1/2 pound thinly slice Black Forest Ham

18 eggs
4 1/2 milk
12 tbsp melted butter
12 cups shredded swiss cheese
3 pounds thinly slice Black Forest Ham

For the crepe batter, combine the flour and a pinch of salt in a bowl and make a well in the center. Add the eggs, and milk and whisk to combine. Stir in the melted butter.
Preheat a 10-inch non-stick skillet over medium low heat with a drizzle of vegetable oil. Cover the bottom of the skillet with just enough batter to coat, lifting and shaking the skillet to help the batter along. Let the crepe cook and lightly brown on one side. Flip over. Place crepes in freezer bag and bag ham and cheese as well.

Thaw. Place some cheese and ham on top of crepes. Season with a little salt and pepper, then fold the crepe over and cook on skillet until the cheese starts to melt.
Serve with a chopped salad.

    Just wondering about the thawing and rising of the dough. Do I thaw and allow to rise before rolling out? Does it then rise again after re-freezing with all the goodies inside?

    My daughter has recently moved out on her own and for whatever reason has never learned to cook. This week, I started trying to freezer cook. Decided I was going to cook on Sunday for as much of the week as I possibly could. The daughter was here to spend Sunday afternoon with me and was “helping” me in the kitchen. I had 2 loaves of bread dough thawed, so I made 2 of the Ham & Cheese Braids and let her take one home. She had hers last night and we had ours tonight. It was a hit at both houses…and has also inspired said daughter into trying freezer cooking with me. We have a plan to spend EVERY Sunday together…we will shop and cook at my house. And each of us will have 5-6 nights of meals ready to go. THANK YOU so much for inspiring her…I am sure her fiance will be thanking you too. But I have the added bonus of spending Sundays with my “little” girl again.

    My hubby LOVED this. LOVED. I used Lays ranch dip mix because I had it on had. I did let the dough rise before making the loaf in response to a posted question. Used leftover ham chunks we had frozen instead of deli slices…will def make again. Thanks!
