Eclair Pie

Here is a yummy summer dessert – you serve it cold!

1 box of graham crackers
1 large package instant vanilla pudding
3 cups milk
8 oz. Cool whip
1 can chocolate frosting

Combine pudding and milk as directed on pudding box and then add Cool Whip. Line the bottom of a 9×13 pan with whole graham crackers. Cover with half of the pudding mixture. Put another layer of crackers on top of that. Add remaining pudding mixture and then another layer of crackers. Cover top layer of crackers with chocolate frosting and refrigerate overnight before serving.

I made this one Sunday afternoon intending to eat it that same night and gave it about 8 hours in the fridge. It turned out great!
