It tastes great and the whole family likes it, but the best part is how easy it is to make this Tex-Mex Macaroni and Cheese. Just start adding stuff to the skillet and it cooks up all together in one pan. Amazing!

Easy Tex-Mex Macaroni and Cheese Recipe

Yield: 1 12 | Serves: 4-6 servings

Ingredients

  • 1 onion, chopped fine
  • 1 green bell pepper, stemmed, seeded and cut into 1/2-inch pieces
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 pound 90% lean ground beef
  • 2 cups water
  • 1 can tomato sauce (15 ounces)
  • 8 ounces elbow macaroni (2 cups)
  • 1 cup frozen corn
  • 1 can chopped green chile peppers (4.5 ounces)
  • 8 ounces shredded Mexican cheese blend (2 cups)
  • salt and pepper
  • 2 tablespoons minced fresh cilantro

Instructions

  1. Cook onion, bell pepper, and oil in 12-inch nonstick skillet over medium-high heat, stirring occasionally, until softened, about 5 minutes.
  2. Stir in garlic and chili powder and cook until fragrant, about 30 seconds.
  3. Stir in the beef, breaking up meat with spoon, and cook until no longer pink, about 1 minute.
  4. Stir in water, tomato sauce, and pasta. Cover and cook at vigorous simmer, stirring often, until pasta is tender, 9-12 minutes.
  5. Remove from heat.
  6. Stir in corn, chile peppers, and 1 cup cheese.
  7. Season with salt and pepper to taste.
  8. Sprinkle remaining 1 cup cheese evenly over top, cover and let sit until melted, about 3 minutes.
  9. Sprinkle with cilantro and serve.
