Mocha Bread Pudding

When International Delight reached out and asked us to come up with a fun new way to enjoy International Delight Iced Coffee, I immediately thought of a Mocha Bread Pudding. I’ve used this Bread Pudding recipe for years! It’s super easy, fast, and best of all, I’m not going to scorch any milk!! My little guy is over a year old now, and I still have “Baby Fuzz Brain”.

But, back to this deliciousness! It’s so easy! You simply cut up some bread, spread melted butter over the top, and then cover with this Mocha Coffee topping and bake!

International Delight Iced Coffee Mocha Bread Pudding Step 1

First, take 6 pieces of white or egg bread, and tear or cut into bite sized pieces. Lay them in a 9×9 pan.

Then melt 2 TBSP of butter and spread over bread. It doesn’t have to be even and it won’t cover all the bread. Just ry to spread it out as much as you can.

Finally, mix 2 cups International Delight Mocha Iced Coffee, 4 beaten eggs, 3/4 Cup Sugar, and 1 TSP vanilla into medium bowl. Pour over bread mixture. Bake at 350 for 40-45 minutes.

Serve warm with vanilla ice cream, or whipped topping! It’s even delicious all by itself!

Easy Mocha Bread Pudding and Delight-ful Popsicles!

Ingredients

  • 6 slices white or egg bread
  • 2 TBSP butter, melted
  • 4 eggs, beaten
  • 2 Cups International Delight Mocha Iced Coffee
  • 3/4 Cup White Sugar
  • 1 TSP Vanilla Extract

Instructions

  1. Preheat oven to 350 degrees
  2. Tear bread into bite sized pieces
  3. Place in 9x9 baking dish
  4. Pour melted butter over bread pieces
  5. In a medium mixing bowl, combine eggs, International Delight Mocha Iced Coffee, sugar, and vanilla.
  6. Beat until well mixed.
  7. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
  8. Bake in the preheated oven for 40-45 minutes, or until the top springs back when lightly tapped.
