Easy and quick caramel sauce from scratch!

No way, right? I am now proclaiming to the world that I can successfully make caramel sauce from scratch. Finally! I am a huge caramel fan, so this is a big deal for me. It tastes better than any caramel you bring home from the grocery store too.

I have tried making caramel sauce from scratch before. It can be tricky and my experience wasn’t pretty. Others can pull it off with no problems, but I ended up just having to throw a burnt sugar mess in the trash, which scared me off from trying to make homemade caramel sauce again.

Then the always-wonderful Mel’s Kitchen Cafe recently shared this simplified version of homemade caramel sauce and I knew it was time to try again. Thank you, thank you.

It is best if you use a heavy-bottomed saucepan, but I didn’t have one and still worked out okay. You just have to watch it a bit more carefully to make sure it doesn’t burn.

Melt the butter, sugar, salt, and cream over low heat while stirring gently. You want it to all melt together slowly and evenly, so I think it is helpful to cut the butter into chunks beforehand.

Then increase the heat to medium and bring it to a boil. Let it boil for 10 minutes. No stirring, but keep an eye on it because you may need to reduce the heat, especially if you are not using a heavy-bottomed pan. Just make sure it keeps on boiling.

Remove from heat and gently stir in the vanilla. Done. A few notes… As with most caramel sauce recipes, try not to splash the mixture while stirring. Also, the sauce will thicken once cold.

  • 8 tablespoons butter
  • 1 1/2 cups packed light brown sugar
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 1 tablespoon vanilla


  1. In a medium-size heavy-bottomed saucepan, combine the butter, sugar, salt, and heavy cream. Melt over low heat while stirring slowly and gently. Once the butter is melted, increase the heat to medium and bring to a boil. Simmer for 10 minutes without stirring. Watch it closely though, and reduce the heat if you suspect the mixture may start to burn (especially if your pan is not heavy-bottomed).
  2. Remove the caramel sauce from the heat and gently stir in the vanilla. Do not scrape down the sides or splash the mixture if possible, as doing so can cause a grainy texture. Use immediately or let the sauce cool a bit and refrigerate. Sauce will thicken when cold. Can be stored in refrigerator for several weeks.
