Double Chocolate Chip Zucchini Cookies

Are you looking for a delicious way to use up the rest of your zucchini harvest?  You will not taste the shredded zucchini in this recipe. The Zucchini provides moisture to these Double Chocolate Zucchini cookies and make these cookies soft and almost muffin like.   These  will not be like your standard drop cookie, they are more of  a rounded soft cookie.  So if you are like me and like sticking vegetables in cookies so that you can call them “healthy” then give these cookies a try!

It is a good idea to let these cookies sit on the pan for a few minutes before removing them to the cooling rack they transport better.  But, these cookies didn’t even make it to the cookie jar at my house they disappeared about as fast as I pulled them out of the oven! This is a fantastic way to use up all the zucchini from your garden and no one will ever know there’s zucchini in them!

Double Chocolate Zucchini Cookie Recipe

Yield: 12-24 cookies | Serves: 12-24

Ingredients

  • 1 cup grated zucchini
  • 1 cup brown sugar (packed)
  • 1 teaspoon baking soda
  • 1/2 cup butter or 1/2 cup margarine
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 tablespoons cocoa
  • 1 cup chopped walnuts (optional)
  • 6 ounces semi-sweet chocolate chips

Instructions

  1. Combine zucchini, brown sugar, baking soda and margarine.
  2. Mix egg and vanilla into zucchini mixture.
  3. Add remaining ingredients.
  4. Chill dough 1 hour in the refrigerator.
  5. Drop by rounded teaspoonfuls.
  6. Bake at 375 degrees for 10-15 minutes.
  7. Do not overbake, these will be soft to the touch but, will firm after sitting.
