Love this Cucumber Salad! It is so refreshing in the summer!

I got this recipe from my father in law. He made it at the last big family BBQ. It has all my favorite ingredients for guacamole, but you get your crunch from the cucumber and you do not need the greasy chips. You are going to love it! Then you are going to crave it’s healthy goodness again and again!

Herb Scissors: I have my eye on these herb scissors. I would love to try them out. Has anyone ever used them? What did you think?

Cucumber and Avocado Salad

Yield: 4-6 cups | Serves: 6

Ingredients

  • 3 Medium Avocados
  • 2 Limes (or one lemon)
  • 1/4 Cup Cilantro Chopped
  • 2 Cucumbers
  • 1/2 teaspoon salt
  • 1/4 Cup chopped Red Onion (optional)

Instructions

  1. 1. Cut cucumber into triangle chunks.
  2. 2. Slice Avocado. Combine in a medium bowl.
  3. 3. Add Chopped Cilantro, salt, lime juice and onion.
  4. 4. Stir all ingredients together and serve.
