Cranberry Relish

My father in law helped me make this relish tonight in preparation for Thanksgiving. It is best if it sits a few days in the fridge before Thanksgiving day.


You will need:

2 bags of cranberries

1 can of crushed pineapple

A good cup of sugar

4 shakes of salt

1/4 cup water

My father in law usually uses a food processor to grind up the cranberries. I do not have a food processor so we tried out the Vita Mix and it worked great. We just were sure to grind up half of the cranberries and put it aside and then grind the other half with the pineapple. This way we still had some chunkier cranberries. Then mix them both together.


Put the sugar, salt and water in a sauce pan over med heat and cook until it boils and runs clear. Then add the sugar water to the berries. Stir over heat till it gets a pretty red color pictured below. Then chill until Thanksgiving. Makes 1.5 quarts.

Note: Depending on how sweet/tart you like your sauce taste test and add more sugar water if needed.

  • If you like this you should try cranberry salsa over cream cheese. YUMMY. It’s our favorite way to bring cranberries into the hollidays. I usually serve with Peppridge Farm or special K crakers–wheat thins are okay too. Cranberries, lime juice, sugar, cilantro, jalapenos, choped in food processor the day before–serve poured over cream cheese with crakers all around the plater, It’s so pretty and delicious. It makes a great appatizer while we wait for the turkey. (for fun you can see how many spelling errors I have in this comment 🙂 I know its a ton)
