Corn Salsa Recipe
This corn salsa is soooo yummy. I love how beautiful it looks with all the different colors; red, orange, yellow, green and purple. I used a red and an orange mini pepper to increase the colors in the salsa. I originally discovered this salsa when I made a Chipotle Bowl. This salsa is also yummy with tacos, burritos, tortilla chips and enchiladas. It is perfect for a light and refreshing summer meal.
I love the fiesta dinnerware.
In honor of Cinco de Mayo coming up and my colorful corn salsa I thought I would share a sweet deal I found on some of the fiesta dinnerware. I love this oval casserole dish and it is only $14.99 right now on amazon. There are so many great colors it is hard to choose a favorite. Since it seems too expensive to own full sets of these for my dinning room table I think it might be fun to just have a few baking dishes or serving pieces.

Ingredients
- 1 Can of Yellow Corn or 1 pound of frozen corn
- 2-3 Sweet Mini Peppers
- ½ cup Red Onion, chopped
- 1 tablespoon Lime Juice
- 2 tablespoons cilantro, chopped
- Salt and Pepper to Taste
Instructions
- Combine all ingredients and stir together.
