One of my all-time favorite chicken kebab recipes!

You really, really should try this recipe. These chicken kebabs are definitely one of my FAVORITE ways to grill chicken! My friends and family all love them too. Yes, even the kids are fans. If you don’t want to grill the kebabs, you can cook them under a broiler just as easily.

Here are the main reasons I LOVE these Chipotle Chicken Kebabs:

  • The flavors are awesome! A total party in your mouth.
  • Super fast. You can have this dinner ready in about 25 minutes. No hours of marinating necessary.

However, you can mix together the chicken ingredients and also the sauce several hours in advance, if you want to.

Just mix up the chicken seasonings, cut the chicken into cubes, and toss it all together. You can find the canned chipotle chile in adobo sauce at any grocery store in the Hispanic foods section or by the canned green chiles. You will probably have leftover chipotle chile in adobo sauce, so you can put it in an airtight container and refrigerate it until you use it again. You’ll probably want to make these kebabs again real soon anyway! Here are some other recipes that use chipotle chile in adobo sauce:

I’m usually not big on dipping, but I love this combination of flavors. The chicken can be a bit spicy because of the chipotle chile and the creamy cilantro sauce cools things right down. So good and so perfect for each other. Sour cream, lime juice, and a bit of fresh cilantro are the stars of the sauce. You can add some plain Greek yogurt to the sauce too, if desired.

Throw some orange-glazed carrots, asparagus, zucchini, or rosemary garlic potatoes on the grill too, while you’re at it!

Chipotle Chicken Kebabs with Creamy Cilantro Sauce Recipe

Serves: 4-5 servings

Ingredients

  • Chicken:

  • 2 pounds boneless skinless chicken breasts, trimmed and cut into 1 1/2-inch chunks
  • 1/4 cup brown sugar
  • 2 tablespoons minced fresh cilantro
  • 1 tablespoon minced canned chipotle chile in adobo sauce
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • Sauce:

  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 3 tablespoons fresh lime juice (about 2 limes)
  • 2 tablespoons minced fresh cilantro
  • 1/4 teaspoon garlic powder
  • 2 green onions, minced
  • salt and pepper to taste

Instructions

  1. In a medium bowl or large resealable bag, mix together the brown sugar, cilantro, chipotle, salt, pepper and garlic powder for the chicken. Toss chicken pieces with the brown sugar mixture. Thread the chicken onto skewers. (If using wooden skewers, be sure to soak them in water for about 30 minutes before adding chicken.)
  2. Combine sour cream, mayonnaise, lime juice, green onions, cilantro, and garlic powder in a small bowl for the sauce. Season with salt and pepper to taste.
  3. Broiling Instructions:

  4. Adjust oven rack 6 inches from broiler element and heat broiler. Line broiler pan bottom with foil and top with slotted broiler pan top. Arrange skewers on prepared pan. Broil, turning occasionally, until chicken is charred around edges and registers 160 degrees, about 10 minutes.
  5. Gas Grill Instructions:

  6. Preheat grill on high heat, covered. Then reduce heat to medium and grill kebabs, turning occasionally, for about 10 minutes. Serve chicken skewers with sauce.

Notes

For spicier chicken, increase the minced chipotle chile to 2 tablespoons.

    I stumbled on your recipe on Pinterest and I will say that this was delicious! I did not have any chipotles (which Was abnormal) so I gave a squirt of sriacha which worked well. I’m excited for the leftovers I have waiting for tomorrow’s lunch!

    This was outstanding! I’ll double the chipotle next time, but yummy nonetheless. The dipping sauce is wonderful.
