Chicken Squash Casserole {Reader Submitted Recipe}

Am I the only one who still has Stove Top in my stock pile from the Thanksgiving sales??? Everyone grows squash and zucchini in their gardens, but don’t seem to have enough recipes with what to make with it!  Well, here is a family favorite recipe of mine that uses both! And I love to freeze it! You can leave out the chicken for a vegetarian meal! Try it, and you will love it.  

Chicken Squash Casserole

  • 2 cup shredded or sliced carrots
  • 1 shredded or chopped onion
  • 6 zucchini, sliced

Cook all above for 5 min in small amount of water in a covered pot.

  • 4 chicken breasts boiled and diced
  • 3 packages stove top dressing, make 2 packages according to directions, add 1/2 of the last package and then leave 1/2 for the topping.

Spread cooked Stove Top dressing on bottom of 9×13 pan. Put vegetables on top of stuffing, then chicken on top.

  • Mix 2 cans Cream of Chicken soup undiluted with 2 cups sour cream. Put over chicken and top with remaining stuffing.
  • Bake 30 minutes at 350 degrees. Or if frozen, 1 hour at 350 degrees.

TIPS:  First I cut up and and steamed the Squash, Zucchini, and Carrots. While it was steaming, I cooked 2 packages of Stove Top according to directions, but added a little of the 3rd package so it wouldn’t be too soggy.

  • Tried this tonight even though I didn’t have stuffing. Just substituted mashed potatoes and cheese. Kids and husband had no idea there was yellow squash in it! Yeah!

    • Thanks for the mashed potatoes and cheese substition suggestion! I hate that I’m such a “follow the recipe” girl! It’s so nice to know how people make variations. Maybe one day i’ll be able to do that too. 🙂 In the meantime, I’ll feed off people like you who help me out! 🙂
