I know you have seen me talk about how crazy hectic our lives can often be and ways that I try to make meals just a little easier and this is another great recipe to do just that!  These Chicken Ranch Tacos can be cooked on the stove or you can go with my favorite method and cook them in the slow cooker.  If you are cooking in the slow cooker then you can just toss all of your ingredients in and let the slow cooker do it’s magic while you take care of whatever else is on your agenda for the day.  On the other hand if you want to cook it on the stove because you need a meal as quickly as possible instead of in a few hours then you definitely have that option as well.  Though both variations are equally delicious I often choose to use my slow cooker for meals like this because of us being constantly on the go.  By choosing to cook our meal this way I simply need to grab tortillas, sour cream, cheese, and any other taco toppings we enjoy to be able to have dinner ready to hit the table once the slow cooker is done.  Typically I serve tacos in our house with shredded lettuce, diced tomatoes, diced bell peppers, beans (typically I decide between black beans and refried beans, but sometimes I just decide to serve them both), diced cucumbers, and diced jalapenos.  To make cleanup easier I will usually just put all of the condiments onto a large platter so that I don’t end up with a large number of  condiment bowls and just have one platter to wash instead.  I also like to cook up some extra chicken and freeze it for another day too which just makes my life a little easier.  I promise your entire family will love making their delicious tacos and I can’t wait to hear your thoughts on this recipe!

Stove Top Method:

  • about 2 pounds chicken breast thawed
  • 1 packet taco seasoning I use about 2 Tbsp
  • ½ cup Ranch dressing

Slow Cooker Method:

  • 2 pounds chicken breast thawed
  • 1 packet dry Ranch dressing mix
  • 1 packet taco seasoning
  • ½ cup chicken broth


Stove Top Instructions:

  • Cut up chicken
  • Cook chicken pieces in a nonstick skillet on med-high heat.
  • Sprinkle on the dry taco seasoning. Do not add any water.
  • Stir and heat for 5-7 minutes until heated through and seasoning is stuck to the chicken.
  • Add Ranch dressing and stir until evenly coated.
  • Heat for about 2-3 minutes until warmed through.
  • Serve in taco shells or tortillas with all of your favorite taco fixings!

Slow Cooker Instructions:

  • Throw it all in the slow cooker and cook on low for about 3 hours. Shred the chicken and cook for another 30 minutes.
