This is one of my favorite meals ever!
2 T. Oil
1.5 lbs. chicken, cooked and cut into 1” pieces
1 clove garlic, minced
3c. broccoli flowerets
2 c. sliced, fresh mushrooms
1 fresh tomato, chopped
1 package (8 oz) spaghetti or linguine
¾ c. grated Parmesan
1 T. dried basil leaves
½ t. salt
¼ t. pepper
¾ c. evaporated skimmed milk
Heat oil in large skillet on med. High heat. Add chicken and garlic. Cook and stir 5 min. or until chicken is done. Remove Chicken.
Add broccoli, mushrooms, and tomato to skillet. Cook and stir 3-5 min. or until broccoli is crisp/tender. Return chicken to skillet. Transfer mixture into large serving bowl. And spaghetti, parmesan cheese, basil, salt, and pepper. Toss to mix. And milk. Mix lightly. Serve plain or over spinache leaves, if desired.
