Chicken, Broccoli, and Mashed Potatoes
With the sale on broccoli at at Freds this week, this recipe came to mind!
Simply bake some chicken breasts (how ever many your family will need)
You can microwave them, bake in the oven , boil them, or maybe you have some precooked ones in your freezer. Pull apart into chunks.
Mix up some mashed potatoes
I always make em homemade! Semi-peel the potatoes, boil and then mash with salt/pepper, butter and a little sour cream. I’ve also thrown in some cream cheese or even whipped cream if I have some on hand. Not a lot, just enough to make em creamy!
Cook up some broccoli crowns
Wash and cut the crowns. If you don’t want to cook them on your stove, you can steam them in the microwave. Simply place them in a microwave safe dish with a little water… cover and cook for 5-6 min. depending on how well done you like your broccoli!
Get one can of cream of chicken out of your stockpile, and then grab some of your super cheap mayo you got last summer (eeks! Hope it hasn’t expired yet!). Blend some together until it tastes good. 🙂 I add some milk to thin it out. You can go as much as 1 part cream of chicken to 1 part mayo, or 1 part cream of chicken to 1/2 part mayo.
Layer the ingredients on a plate to serve. Potatoes, chicken, broccoli, with the sauce poured on top. It’s YUMMY!
