Cheesy Chicken, Bacon and Tater Tot Crock Pot Bake
We have been out of town quite a bit this month, which has gotten me out of the habit of making dinner. About 1pm this day, I realized I needed to make dinner tonight, and came across this easy crock pot bake. It sounded pretty similar to the Tater Tot casserole from a few weeks back, but this one adds bacon and chicken breasts, and the added ease of making it in the crock pot! It was so tasty, and I think we will be making this version of the comfort food from now on, as it also does not have the added preservatives in the Cream of Chicken soup. NOTE: This is the recipe for how I made it.
Serves 6-8 for about $1.10/serving
INGREDIENTS:
1 bag tater tots – ($1.34)
6 slices of bacon, cooked and crumbled – ($1.24)
2 boneless skinless chicken breasts, cut into 3 sections each – ($2-3)
3 cups grated cheddar cheese – ($2.24)
3/4 cup milk – ($0.12)
salt and pepper to taste
DIRECTIONS:
Grease the bottom of the crock pot and layer with half of the tater tots.
Sprinkle 1/2 of the bacon crumbles over tots, and top with 1 cup of cheese.
Next lay chicken on cheese layer and sprinkle with salt and pepper.
Sprinkle remaining bacon and 1 cup of cheese over chicken. Layer the rest of the tots on, and sprinkle with last of cheese.
Pour milk over top. Cook on High for 3-4 hours.
