Breaded, Smothered Chicken

This chicken dish can be slightly dressed up and eaten on paper plates, or can be fancy enough to be served on your best china!

Ingredients:
Boneless, skinless chicken breasts (thawed)
Bread crumbs
Eggs
Shredded mozzarella cheese

For the Sauce:
Tomato Sauce
Basil
Garlic

For the sauce: just mix tomato sauce with basil and garlic.  Simmer on low heat.

Dip thawed, raw chicken in a bowl containing whipped eggs.  Then dip the chicken into a separate bowl containing bread crumbs.

Bake breaded chicken on 375 until it is almost done.  At that point, remove it from the oven and smother it with tomato sauce.  Add shredded mozzarella cheese on top.  Return the chicken to the oven and let it finish cooking.  Remove and enjoy!

For a more elegant, more ambitious version of this, cut the chicken horizontally most of the way through, leaving about 1/2 inch attached at the edge.  When you take it out to smother it, put ham and mozzarella cheese in the middle of the chicken.  Then smother and cook as explained above.

If you just want the chicken without the cheese and sauce, mix basil and garlic into the bread crumbs.  Dip the chicken in egg, then into the crumb mixture.  This version can be fried in olive oil or baked.
