Banana Chocolate Chip Muffins

It seems like all to often I am looking for a way to use up a brown banana that got left on the counter uneaten. Since I really try to avoid food waste I will typically make Banana Bread, throw the banana in a smoothie or throw the banana in the freezer to have in a smoothie later. Ever since my friend Stephanie introduced me to the this Banana Muffin recipe these are the only thing I want to make with old bananas. In fact sometimes I secretly hope a banana will go brown so that I can make these. I am not a huge fan of banana bread, but I am a huge fan of banana chocolate chip muffins!


1 ½ Cup Flour
2/3 Cup Sugar
1/4 teaspoon Salt
1 ½ teaspoon Baking Powder

1 Cup Mashed Banana
1 Egg
1/2 Cup Butter (melted)
1/4 Cup Milk
3/4 Cup Chocolate Chips
1/2 teaspoon Vanilla

Combine all dry ingredients: flour, sugar, salt, baking powder.  In a separate bowl beat together mashed banana, egg, butter melted, milk and vanilla. Add dry ingredients and chocolate chips and mix until moist.

Pour batter into muffin pans that have been sprayed with cooking spray or lines with paper. Fill 3/4 full.

Bake muffins for 30 minutes at 350°.
